This weeklong course takes your cooking to a new level, building your kitchen confidence and allowing you to use more creativity in what your prepare. You learn new techniques and the concept of cooking without recipes as we make dishes each day which incorporate a variety of cooking and baking techniques. Students will make stocks which are used as a base for other recipes and sauces. You will learn about flavor dynamics, presentation skills and much more. Menus are seasonally adjusted. The small class size (max 6) ensures that you receive personalized instruction. Fee includes hands-on instruction, logo apron, detailed reference manual with recipes, meals prepared by class served with wine/beverage. Lodging is additional and is available at CasaLana B&B also.
